Chef Nobu Matsuhisa's Office Bag Lunch

Nobu Matsuhisa is the owner of the high-end restaurant franchises Nobu and Matsuhisa, which have outposts around the world, from the U.S. to Hong Kong, Australia to Greece. Recognized for blending Peruvian influences with Japanese cuisine, the Japan-born chef has earned several Michelin stars for Matsuhisa Beverly Hills, Nobu Las Vegas, Nobu New York, Nobu London, and Nobu Berkeley Street.

Chef Nobu shares with Bloomberg Businessweek his mother’s recipe for macaroni salad with tonkatsu sauce. “My mother was my inspiration. I learned to cook from watching her. She could take something as simple as macaroni salad from good to great,” he says. “I enjoyed eating this dish as a child and still make it as a quick lunch. I hope you enjoy this as much as I do.”

Ingredients:

2 cups precooked macaroni
½ cup diced ham
1 diced apple
½ cup diced cucumber
2 oz. diced onion
1 chopped hard-boiled egg
½ cup mayonnaise
2 tbls. Tonkatsu sauce
Salt and pepper to taste

Instructions:

Combine the first seven ingredients and mix well. Drizzle with tonkatsu sauce.
